It would be worth remembering that Wolf said to follow the birds one-by-one. You have already followed the Blue Footed Booby twice. Does any bird make an appearance in his notes after this?

Breaking down the mating steps, will let you pick seven letters from the columns on the sheet immediately (as shown above).

You even have a sheet that has an Albatross flying on it, with three columns. You have three strips that have an Albatross looking Left, Up and Right. These strips can be placed on top of the columns.

The little note at the bottom says that the elegance of the Albatross will help guide the way. Wolf calls the mating dance of the Albatross elegant, and then lists the steps:

  1. Bow head to left
  2. Bow head to the right
  3. Bow head to the left
  4. Bow head to the right
  5. Bow head to the left
  6. Bow head to the right
  7. Raising beak skyward, i.e. up

Breaking down the mating steps, lets you pick 7 letters from the columns on the sheet immediately. But the sheet has a total of 12 steps, and you by repeating the same steps as above, you can pick the rest of the five letters as well.

This will give you the letters = SANCRISTOBAL
